Gaspacho
The typical Spanish summer soup, Gaspacho.
It's perfect when you don't feel like eating too much in the humid/hot summer as it is called "drinking vegetable".
The tip is to choose riped tomatoes. Even if you don't like fresh tomatoes, you will enjoy it as vinegar makes the taste mild.

[Ingredients] 6-8ppl
Veggies
Ripe tomatoes (Medium): 8-10pc (about2kg)
Cucumber: 4pc
Green peppers:4pc
Garlic: 1pc
Others
Extra virgin Olive oil
White wine vinegar (As much as you like!)
Salt
[Instructions]
Cut tomatoes into dice
Peel cucumbers and cut them into dice
Take out the seeds in the green peppers and cut them into dice
Cut garlic into half and take out the heart.
Put everything into blender
Strain in a colander
Add olive oil, vinegar and salt and check the taste
Mix again by the blender
Store in the fridge until it's cold
