Gaspacho

The typical Spanish summer soup, Gaspacho. 

It's perfect when you don't feel like eating too much in the humid/hot summer as it is called "drinking vegetable".

The tip is to choose riped tomatoes. Even if you don't like fresh tomatoes, you will enjoy it as vinegar makes the taste mild.

[Ingredients] 6-8ppl

Veggies

  • Ripe tomatoes (Medium): 8-10pc (about2kg)

  • Cucumber: 4pc

  • Green peppers:4pc 

  • Garlic: 1pc

Others

  • Extra virgin Olive oil

  • White wine vinegar (As much as you like!)

  • Salt

 

[Instructions]

  1. Cut tomatoes into dice

  2. Peel cucumbers and cut them into dice

  3. Take out the seeds in the green peppers and cut them into dice

  4. Cut garlic into half and take out the heart.

  5. Put everything into blender

  6. Strain in a colander

  7. Add olive oil, vinegar and salt and check the taste

  8. Mix again by the blender

  9. Store in the fridge until it's cold

 

*完全にドライになった残り物のバケットパンや、赤パプリカや玉ねぎを入れても良い。

*飾り付けに玉ねぎやトマト、ピーマンのみじん切りを散らすのもGOOD!

*野菜の新鮮度によるが、だいたい1週間ほどは冷蔵庫で保存がきく
