Spanish Omelet (Tortilla de patatas)

Tortilla de patatas is a traditional recipe in Spain. You have to be careful not to overeat because it is so delicious! Each family has its own recipe and you can play with ingredients. It's also very tasty to have it as a sandwich (bocadillo).

[Duration] 45mins(Mostly frying time)

[Ingredients] (6-8ppl)

Veggies

  • Potatos:1.5kg (Large 8−9pc)

  • Onions:Medium 2pc

  • Eggs:Medium 5-6pc

Other

  • Extra virgen olive oil

  • Sea Salt

[Instructions]

  1. Peel potatoes skin and slice the potatoes (2-3mm) 

  2. Peel onions and slice (5mm)

  3. Heat olive oil in a pan (a thickness of 5mm)

  4. Add potatoes and onions and fry them roughly for 5-10 mins

  5. Put a lid on the pan and leave it in a middle heat until the veggies are very soft. (Stir sometimes)

  6. Use  a wooden spatula to mix them in the pan

  7. Break eggs in a bowl and beat them well 

  8. Stir the veggies and pass through a strainer or a colander to remove excessed oil.

  9. Add the veggies into the bowl and mix them very lightly

  10. Add some sea salt(don't put less salt otherwise it will taste very bland)

  11. Use a pan ( a diameter of  aprox 20cm) idealy teflon coated one and pour olive oil very thin and heat it in low heat

  12. Gently pour eggs

  13. Shake the pan very gently to distribute heat evenly 

  14. As soon as the bottom of the egg has a brown colour, put a flat plate that is a little bit bigger than the diameter of the pan 

  15. Hold the bottom of the plate and turn over the plate very carefully (Don't get burned!) 

  16. Slide the omelet back into the pan from the place to bake the other side 

  17. Shake the pan again to bake the bottom of the omelet

  18. Repeat 14-16 again if needed. 

  19. Bring the omelet on the clean plate and you are ready to eat! 

 

*The key point is to have a good pan. Some Spanish people have a pan just for cooking omelets. 

*Some people might disagree with me but I used to like to have it with ketchup :)
