Zucchini Soup (Crema de calabacín)

[Duration] 30min(Mostly simmering time)

[Ingredients] (6-8ppl)

Veggies

  • Zucchini: large 2pc 

  • Onion:large 1pc

  • Potatoes:Large 1pc 

  • Fresh milk (or cream): 250ml

Other

  • Extra virgin olive oil

  • Vegetable stock cube:1pc

  • Cheese (Optional): 60-100g

[Instructions]

  1. Dice zucchini

  2. Peel onion and potato and dice 

  3. Use a big pot and heat olive oil, lightly stir-fry onion and potato

  4. Add zucchini and simmer in medium heat

  5. Add water until the veggies are covered then add a vegetable stock

  6. Lid and cook with low-medium heat for about 30 minutes

  7. Pour into a mixer and mix until it gets smoother

  8. Add fresh milk and mix it again in the mixer for 30 seconds

  9. Pour back the soup in the pot and add cheese (optional) with low heat till it melts

 

*Store in a fridge for a few days 

*YOU CAN EAT WITH WARM OR COLD
